POSITION SUMMARY: Duties and Responsibilities
The position of Part-Time Personal Chef involves the meal planning, shopping, preparation, production, clean up, and organization of kitchen for lunch, snacks, dinner, and dessert once or twice a week. Occasional breakfast production may be required. Knowledge of allergy food preparation with considerable attention paid to dietary restrictions (allergens - gluten, dairy, shellfish, fish, nuts, eggs, seeds, etc...) is a must. There are many varied responsibilities geared toward achieving the central objective to: Enable the parents and children to spend more time together, while taking care of all related aspects of selecting, preparing, serving, and helping them with the enjoying food and drink. In cooperation with other internal departments and under the supervision of the Household Manager and the Kitchen Manager/Personal Chef, the Part-time Personal Chef will be responsible for coordinating meal times, the pack of to-go foods, occasional special events, and national and international travel. It is necessary for the Part-time Personal Chef to quickly learn the needs of the household, and analyzing the environment to improve efficiency and service. A flexible workweek is required with estimated kitchen production hours between 9:00am - 7:00pm Sundays and Mondays. This position is demanding and requires someone who is prepared to cook for children, has patience, is flexible, and a keen eye for detail. Discretion and compassion are mandatory.
EDUCATION AND EXPERIENCE - Required
• Culinary Arts Degree and 2 + years of Personal Chef experience; and/or demonstrated ability to perform at an advanced level.
• Experience dealing with local, organic and seasonally available ingredients.
• Passion for farmers markets and homegrown produce.
• Experience working with heirloom varieties of produce.
• Knowledge of dietary restrictions and the ability to present foods in a fun and playful way to children.

Brief Introduction to TREETOPS Estate:
TREETOPS Estate is a fully-staffed19 acre private estate on the Stamford/Greenwich boarded in CT. The estate consists of a 33-room main house with 4 gardens, 2 greenhouses, a gatekeeper’s house, theater, bomb shelter that doubles as a root cellar, and 3 colonies of Italian honey bees. Once home to the flamboyant torch singer Libby Holman, the estate is now garnished with over 3-million daffodils that bloom April-May. The current stewards (family of 4) are in the process of tirelessly restoring the estate to its original glory, after years of mistreatment.
Treetops Household Staff:
Estate Grounds/Facilities Manager
The Estate Grounds/Facilities Manager is responsible for the successful management of all services provided outside the household as well as the mechanical, electrical, and plumbing systems inside the house. The Estate Grounds/Facilities Manager works in conjunction with the House Manager in the overseeing of the Treetops staff and proper functioning of all facilities and services.
Household Manager
The Household Manager is responsible for the successful management of all services provided to the family inside the household and all human resource administration. The Household Manager works in conjunction with the Estate/Grounds/Manager in the overseeing of the Treetops staff and proper functioning of all services. Household Manager responsibilities include: the implementation and administration of the Treetops household manual, training of household staff, administration of household staff, booking travel arrangements and coordinating staff for travel, maintaining household security codes and security measures, greeting and serving guests, errands (shopping, gift purchases, dry cleaning), managing the household calendar, household bookkeeping and accounting tasks, planning and directing special events, etc…
Kitchen Manager/Personal Chef
The Kitchen is run by the Kitchen Manager/Personal Chef whom plans and coordinates shopping, meal preparation, production, service, and clean up of the kitchen and food storage areas. The Kitchen Manager/Personal Chef is also responsible for working the with House Manager to coordinate events at Treetops as well as travel to the family’s vacation in Colorado.
Housekeeping Team
A team of 2-3 Housekeepers that take care of the provision of linen services, cleaning of estate buildings and facilities. The Housekeeper also assists the Kitchen Manager/Personal Chef with the cleaning of the kitchen after meal times as well as with deep cleaning. Housekeepers also inspect rooms, halls, and laundry room to insure proper cleaning and laundering. In addition, Housekeepers maintain simple records related to supplies and linens used/needed.
2010 garden production consisted of 21 varieties of heirloom tomatoes, 8 heirloom corn varieties, 6 heirloom potato varieties, cauliflower, swiss chard, peppers, cucumbers, rhubarb, carrots, edible flowers, salad greens, 3 heirloom bean varieties, 5 heirloom squash varieties, an heirloom herb garden, strawberries, blueberries, raspberries, concord grapes, and miracle fruit...
A few notes on the dietary restrictions:
The Lady (Wife): currently on the GAPs diet (http://www.gapsdiet.com/) that is based on the Specific Carbohydrate Diet
(http://www.breakingtheviciouscycle.info/). She has come to this diet after working with a dietitian with the main goal of regaining her ability to consume gluten and dairy without having any allergic reactions. Currently she is avoiding gluten, dairy, and walnuts because of the cross reactivity in her body. Aversions consist of lamb, anything with a head on it (proteins have to be disguised by shredding and mixing with veg), and a few other things... She is allergic to dairy, gluten, and walnuts. (See photo’s below for a more detailed list of GAPs legal and illegal foods).
The Principal (Husband): very open palate. Loves foods ranging from raw turnip ravioli with a cashew nut cheese and raw tomato sauce to seared foie gras with slivered white truffles pasta and toasted pistachios crisps. It is winter and he has very much been enjoying corned beef and cabbage recently. As long as it is cooked properly and presented artfully, he is a happy camper. No Allergies.
The Mind (9 year old boy): The older boy is a genius (seriously). The second week I was at the property he took me on a native plants walk and gave me the Latin names of the Daffodils on the property. He loves being coursed out with the adults. His palate accepts duck confit to organic hot dogs, cucumber salad to tomato soup with grilled cheese. No allergies.
The Star (5 year old boy): The younger boy has a personality that shines very bright.
Unfortunately, he is also the one with the most health issues. Current allergies consist of: gluten, dairy,
eggs, fish, shellfish, nuts and seeds. His diet is so restrictive that he mainly eats a steady diet of: mangoes,
well steamed broccoli, carrots, edamame, white rice (with organic earth balance), and proteins such as organic hot
dogs, BBQ baby back ribs, turkey legs, grilled rack of lamb, grilled tenderloin, and shredded chicken.
